100% in temperature-controlled vats
Alcoholic fermentation with selected yeasts.
Malolactic fermentation.

Cold treatment for tartaric precipitation.
SERVING SUGGESTIONS
Ideal drinking temperature 12°-13°C.
Excellent for drinking when young.
Enjoy as an aperitif or with grilled fish. Ideal with for making Kir (aligoté and crème de cassis).
OENOLOGIST’S TASTING NOTES
Eye: very fine pale yellow with silvery highlights.
Nose: straightforward first impression, with plant nuances typical of the Aligoté and perfectly expressive of its terroir.
Taste: fresh attach, with elegance backed by floral and mineral notes. Highly-bred finish.
Comment: a wine which has kept all the original freshness of the Yonne wines.
